Thanksgiving Weekend at Echo Valley Ranch

The days get shorter. The nights get longer. And soon, it will be winter. But for now, it is still autumn – and this weekend, we got to celebrate Thanksgiving at Echo Valley Ranch.

It is simply breathtaking: At the moment, the landscape around Echo Valley Ranch presents itself in the nicest fall colours. The trees radiate in warm shades of red and yellow. The horses have already grown some of their winter coat – and look like big teddy bears. The barn kittens are trying more and more to find a warm place for the night in one of our rooms. And our Border Collies can hardly wait for the first snow. It has become autumn. Winter is just around the corner. However, there are a few more gorgeous days to come. Up to now, the weather has been perfect. On Thanksgiving weekend, we were thus able to enjoy trail rides, hikes and relaxing in the sunshine at Echo Valley Ranch.

Thanksgiving was all about spending quality time with guests and friends, while enjoying a perfect turkey dinner – yet again splendidly prepared by our fabulous chef Jason. The atmosphere was great. It was exactly as it should be on a Thanksgiving evening: delicious food, interesting conversations at the dinner table, a round of cards or two with the kids. Although, our youngest guest slept through most of the evening: three-month old Freddy is not too interested in turkey dinners yet and rather relies on his mom in terms of nutrition.
All in all, we enjoyed the evening with our guests very much and we are already looking forward to our next turkey dinner at Christmas.

Echo Valley – a Self-Sustained Ranch

People, who have met her, know how much she loves her plants. This is why gardening is a matter for the boss at Echo Valley Ranch. Nan personally takes care of the vegetables, herbs and fruits, that grow on the ranch – with much support of the Thai crew, of course.

At Echo Valley Ranch sustainability is not only an empty phrase. On the contrary. We live and breathe sustainability and rely on the natural circle of life to do so. Almost everything green we serve is from our own ranch gardens. The meat comes from our own cattle and pigs. Our ranch chickens are in charge of the breakfast eggs.
But what entails sustainability? At Echo Valley Ranch, we recycle almost everything or we use our own resources. The horses and cows eat ranch grass. We then use the manure to fertilise our plants. For the irrigation of our fields, we use the water from our streams. And the pigs are fed with leftovers from the kitchen.  All this ensures that we produce as little waste as possible. All our vegetables are a product of organic farming. Naturally, we do not use any additional fertiliser.

It’s all a matter of planning
Every year in March, Nan starts to plan which vegetables, herbs and fruits are going to be planted in what amount and where. Most of the vegetables start out in the green house in spring. Later in summer, mostly in June, the seedlings are moved to the outdoor gardens.
It is a lot of fun to do your own gardening but it is also a lot of work. This is why, Nan counts on the support of the entire house keeping crew. In spring, the brothers Numchoke and Numchai help to fertilise the gardens with our horse manure. Mihoko and Frank are then responsible for most of the work around the garden. Frank waters the plants twice a day. Mihoko basically knows all the vegetables personally and is in charge of picking the vegetables for the day, so that the kitchen has something to work with. Everybody of the team helps with seeding and weeding: Mihoko, Frank, Tum, Jaranya, Wanna, Yalaporn, Numchoke and Numchai. And, of course, Nan herself.

As mentioned before, we also produce our own meat – beef and pork that is. All the way up to the end, our animals lead a very good life. The pigs have their private garden with their own spring for fresh water supply. The cows roam the forests and fields around Echo Valley Ranch – before finally landing on our plates.
Adequate culinary preparation and presentation of our ranch foods is up to our chef Jason. In the name of sustainability, we wish you Bon Appétit from Echo Valley Ranch.

We have been so busy here at EVR that I have not had time to focus on an extremely important part of , not only our daily routine, but also the sustenance that gives us all the energy, balance and power to enjoy and maintain such an invigorating and eventful environment.

So to celebrate, not only the beauty of fresh organically grown veggies, herbs,  berries and other fruits picked at perfect ripeness right here on our ranch; but also the birthday of the woman who is the brainchild behind all this healthful growth.  I will now give you a little taste of all the tantalizing and mouth watering goods that are offered daily here on the ranch.

HAPPY BIRTHDAY NAN! … and thank you for giving us nourishment, major tummy tickling,  flavour,  abundance and taste ’scentsation’ – and simply the best gourmet produce to be found in any market anywhere!

Oh … and thank you Chef Kim and Yaloporn, Jaranja, Wanna, Tum and Mihoko  for endless  amazing meal preparation- and gardening expertise – and we must not forget Claudia, Frank, Numchai and Numchoke (for helping to make everything groooooow) and to all of you for transforming all these Godly creations into works of art on our plates that create and bring beautiful and eclectic music to our palates!

As it has been proven to me over the past week with guests from Egypt, the UK, the Netherlands, Seattle, New York, California, France, Switzerland and local ‘Canadians’ … not to mention the past weeks where guests were from a plethora of nations – people from anywhere in the world appreciate food that is picked fresh, straight from the grounds on which they sit (or run or ride) with the awareness of its source and the people who take part and pride in the harvest.  I am very proud and thankful to be spoiled by this humble ‘group o’  gardeners and gurus o’ grub’!
